I have never liked making homemade breaded anything. The bread always comes out soft and squishy on one side and the meat is never full cooked. Recently my friend bought a cooking magazine that was all about chicken. It had a recipe for homemade chicken fingers and we gave it a shot. It was sooo good that I had to make it at home and I actually did it! They were fantastic. My picky husband even ate them…So here is the recipe.

6 boneless skinless chicken breast
1 egg, lightly beaten
1 cup buttermilk
1 1/2 tsp garlic powder
1 cup all purposed flour
1 cup seasoned bread crumbs (I used plain)
1 tsp salt
1 tsp baking powder
Oil for frying
1. Cut Chicken into 1/2 strips (I used chicken tenders- cuts down the time); in a large resealable plastic bag combine the egg, buttermilk and garlic powder, add chicken. Seal bag and turn to coat. Refrigerate for 2-4 hours
2. Drain and discard the marinade. In another large resealable plastic bag combine the flour, bread crumbs, salt and baking powder, add chicken. Seal bag and Toss to coat
3. In a deep skillet, add oil (1 to 1 1/2″) and heat to 375. Fry the chicken in batches for 4-5 minutes or until golden brown on both sides.
GO MAKE IT FOR DINNER TONIGHT.
